A product which has a Designation of Origin is closely associated with the environment in which it has been produced. The cheese Queso Mahón-Menorca is no exception; the geological and meterological factors in Minorca -land, temperature, humidity, etc.-, play a very important part in the aroma and the taste of Minorcan cheese. Thus, it is impossible to talk about our cheese without making reference to the place in which it originated.
The Minorcan countryside has been able to maintain a balance between its natural surroundings and a sustainable environmental and economic development. Environmental friendliness has been achieved between the development of economic activities, the consumption of natural resources and the preservation of the countryside. These factors have been fundamental when, in 1993, UNESCO designated Minorca as a Biosphere Reserve.
There are more than 400 biosphere reserves throughout the world where they experiment with the concept of sustainable development. These are places where human endeavour works together with the preservation of natural resources and with the cultural heritage. Minorca has opted for sustainability for its future generations of inhabitants and residents in order that they may continue to enjoy its natural resources and beauty
of the countryside which we have today. For this reason, we care for our territory so as, for the long term, to maintain the quality of life and the environmental values which has earnt us the UNESCO designation. This richness, this symbiosis between humans and nature, has been transmitted to the products of the Minorcan countryside, and is one of the factors which distinguishes and contributes to its excellence.
