Designation of Origin-Menorca, guarantee of authenticity.

The Designation of Origin concept (D.O.) is a type of geographical indication which is applied to agricultural or food products whose quality and properties are inextricably linked to the area, and which focuses on legally protecting certain foodstuffs from a particular area against products from other production areas. It refers to a rating which is focused on legally protecting certain foodstuffs of a particular region from products which may be trying to benefit from the good name created by the original manufacturers.

The manufacturers who qualify for a Designation of Origin commit to maintain a high level of quality and to follow traditional techniques and methods depending on the type of product. In order to guarantee this range of commitments, each Designation of Origin usually has some kind of public organisation which is entrusted to manage it and to endorse the products which follows these rules.

In the case of the Queso Mahón-Menorca cheese, there has been in existence a Regulating Council for the Protection of Designation of Origin since 1985. Nevertheless, the name of the denomination used originally was just 'Mahón', owing to a historically incorrect usage of the terminology as the cheese in question had always been produced on the Island of Minorca. In order to correct this inaccuracy, the denomination was changed in 1998 to 'Mahón-Menorca'.

In order to ensure that the cheese complies with the the regulations of Designation of origin, a back label numbered by the Regulating Council must be attached in addition to the normal label, and this guarantees the origin and quality of the cheese Queso Mahón-Menorca. This stamp represents a guarantee of authenticity for the consumer.

Two types of Designation of origin

With regard to the cheese Queso Mahón-Menorca, the Designation of Origin has two different types. In the first place, the denominated cheese 'Queso Mahón-Menorca', embraces a cheese which has not been treated by, for example, refrigeration or pasteurisation. Secondly the artisan cheese 'Queso Mahón-Menorca artesano', is distinguishable as cheese which has been produced from fresh milk and which has not been treated.

La Payesa cheese occupies a special place in this categorisation for the reason that although our milk has been refrigerated, it has not been pasteurised. This process differentiates between the taste of a traditional cheese and of a artisan cheese. At La Payesa, all our cheese has been made with raw milk using artesanal methods and following old traditions. And although it is produced in a factory, our cheese is like more of an artesanal cheese rather than an industrial cheese, and this is noted in its taste.

Shipments shall be handled by MRW. Shipping expenses shall be paid by the customer. Before accepting the order, the customer will be informed of the exact shipping expenses.

The purchased products shall be delivered to the person/company at the specified address, within the time limits established for the selected shipment method.

Domestic shipments shall be received in 24/48 hours (workdays). International shipments will be delivered in approximately one week.
